Mailänderli
Stir 250g butter or margarine in a bowl until soft. Add 225g sugar, 1 pinch of salt, 3 eggs and stir until the batter is light-coloured. Add the zest of 1 lemon. Add 500g of flour and knead into a batter. Cover it and put it into the fridge for ca. 2 hours.
Forming your Mailänderli:
In portions, roll out your batter 5 mm thick on a little bit of flour. Cut out different shapes with a cookie cutter and place them onto baking tray lined with baking paper. Place them into the fridge for ca. 15 minutes, then brush with egg wash. Optionally, before you bake them, use a fork to gently create diagonal marks in the egg wash across the cookies's surface. Alternatively, before you brush the cookies with egg wash, use a knife to create diagonal indents.
Baking:
ca. 10 minutes at 200°C in the middle of the preheated oven.
