Preparing kings' cake
Preparation time:
ca. 20 minutes
Fermentation time (let dough rise): 3-4 hours
For 1 cake (8 portions)
Baking time: 200 ° C, 20 - 24 minutes
Version with sultanas
Pour hot water over the sultanas and leave them to soak for 1 hour.
Version with chocolate
Chop the chocolate.

Producing the dough
Mix flour, sugar and salt. Dissolve the yeast in a little bit of milk. Add it together with the rest of the milk and the butter. Knead well to a smooth dough. Cover and let it rise until its volume has doubled. Strain the sultanas and allow the excess to trip off, then carefully knead them into the dough (or the chocolate pieces).
Cover the dough and let it rise until its volume has doubled once again. Form a ball out of a quarter of the dough and place it on a baking tray lined with baking paper. Cut the remaining dough into 8 pieces and form them into balls as well, hide the king in one of the balls. Arrange the dough balls with a little bit of space around the centre piece. Cover with a moist towel and let them rise for 15 min. Brush the cake with egg wash and if desired decorate with flaked almonds and decorating sugar.
Preheat fan oven to 200°C and bake in the lower part of the oven for 20 – 24 minutes.
